For me, this fall marked a true mother step. After 28 years of taking a picture on the first day of school and sending my daughters to pre-school, kindergarten, elementary school, middle school, and high school (multiplied by five), I was confronted with the first day of my baby’s final year.
Now that everyone save the youngest has graduated from college, it’s obvious that parenting a college student is vastly different from raising a child in kindergarten. I spent my formative years in the northeast section of Portland, where I attended the same elementary school through the eighth grade. At that point, I estimate that I had had close to 1,500 meals in the cafeteria in our basement. Most of those—more than two thirds—were “hot meals”.

Ingredients:
2 tablespoons sugar
1.23 cups of water
1 tablespoon of shortening
A tablespoon and a half of cornmeal
approximately 2.5 cups of all-purpose flour
3/4 cups of powdered instant milk (Recommended is one is non-dairy)
To taste: salt
1.5 tablespoons of oil
Pizza sauce, 1 cup (You can increase the quantity to taste)
Cheese, mozzarella (2 cups or increase for cheesy taste)
Choose your favorite pizza toppings.
Preheat the oven to 475 degrees Fahrenheit.
To begin, take a pan and grease it with shortening. Spread the cornmeal out now and put it aside.
Now, using an electric mixer, combine the yeast with a little amount of warm water and mix on medium speed for about 5 minutes.
The ingredients that go into the mixer are milk, flour, salt, and sugar. Make sure to whisk for at least 10 minutes. The mixture is now at a point where it can overwhelm the whisk.
Let the mixture settle for about 20 minutes at room temperature after spreading it into the prepared pan.
Then, place it in the oven for 10 minutes.
After removing the casserole from the oven, top it with the sauce and cheese of your choice and your preferred garnishes.
Bake it again for 10 to 15 minutes to start melting the cheese.
