Roast chicken leftovers are ideal for this dish, but poached chicken, grilled chicken breasts, or even store-bought rotisserie chicken would do in a hurry. Turkey that has been cooked and then frozen works just as well as fresh.

Although my family enjoys both conventional red sauce and alfredo-based lasagnas, I find that the latter, especially when made with chicken and broccoli, is the clear favorite. This is preferred by my children than traditional red sauce lasagna. If you’re not a lover of broccoli by itself, this is a great way to integrate it. The flavor of broccoli is greatly enhanced by the addition of Alfredo sauce.
This is a dish I’ve made for many gatherings and it always goes over well with guests. It’s also perfect for bringing along on a food delivery service or bringing yourself. Usually, I’ll prepare two servings and stick one in the freezer (See Notes). I have successfully made multiple batches by doubling or tripling the recipe, baking in disposable pans and then freezing the extras. Ingredients
a package of 8 pre-cooked lasagna noodles (See Notes)
4 cups of shredded or chopped cooked chicken from a rotisserie
fresh broccoli, florets removed and roughly diced (about 4 to 5 cups).
Three cups of Mozzarella
Ricotta cheese, one cup
1 egg
a half a teaspoon of dried basil
1/4 teaspoon of dried oregano
Parsley, 1 tablespoon
Parmesan cheese, 1/2 cup, shredded (1 24 oz. jar of alfredo sauce, shredded)
Instructions:
Bring oven temperature up to 350 degrees Fahrenheit.
Apply cooking spray to a 9-by-9-inch baking dish.
Mix together the ricotta, 1/4 cup of the shredded parmesan, the egg, the basil, the oregano, and the parsley in a bowl. Blend thoroughly.
Cover the bottom of the dish with a thin layer of Alfredo sauce.
Spread a layer of 4 lasagna noodles on the bottom of a casserole dish. They may need to be cut in half and overlapping slightly to fit.
Put half of the chicken on top of the lasagna noodles.
Next, spread a layer of broccoli.
Smother everything in half of the sauce. Be sure to reach all the way to the edges and into the crevices! The noodles won’t get done cooking and won’t be as good if you don’t cover them.
Cover the sauce with dollops of the remaining ricotta mixture. There’s absolutely no reason to share this around.
Sprinkle a quarter of a cup of grated parmesan and half of the mozzarella cheese on top.
Noodles, chicken, broccoli, sauce, ricotta mixture, and remaining mozzarella should be used twice.
Tent the foil over the dish (spraying the inside with oil to prevent the cheese from sticking) and bake at 350°F for 35-40 minutes.
When bubbly and the cheese has melted, uncover the lasagna and bake for 15 to 20 minutes more. To get the cheese bubbly, broil for 2–3 minutes (optional).
Ten minutes to a quarter hour of resting time is recommended. Serve by slicing into squares.
Tips
It doesn’t matter if the broccoli is fresh or frozen, you may use either in this dish. It’s imperative that you cook it before incorporating it into the chicken and cheese sauce.
When adding the chicken and broccoli combination to the lasagna, make sure all the liquid has been drained. The lasagna won’t go soggy if you do this.
If you don’t feel like making your own spaghetti sauce, you can always use one that you buy at the supermarket.
You may make this dish vegetarian by substituting mushrooms or spinach for the chicken.
