Servings: 4 people

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients:

  • 4 salmon fillets
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped (for garnish)

Directions:

In the warmth of a rustic kitchen, reminiscent of a Tuscan villa, season the salmon fillets with salt and pepper. Gently sear them in a skillet until they’re perfectly golden and flaky, like the sun setting over the Arno River.

Set the salmon aside, letting it dream of Italian landscapes. In the same skillet, melt the butter, allowing the minced garlic to dance and become fragrant.

Whisk in the heavy cream, and as it bubbles and simmers, introduce the Parmesan cheese, stirring until a velvety sauce is born. To this sauce, add the sun-dried tomatoes and fresh cherry tomatoes, letting them soak up the flavors.

As the sauce thickens and the tomatoes soften, fold in the fresh spinach, watching as it wilts and melds into the sauce. Gently nestle the salmon back into the skillet, allowing it to bask in this Tuscan embrace.

Once everything is heated through, finish with a sprinkle of fresh basil and parsley, imagining the fragrant fields of Tuscany.

Tips or Notes:

  • Pair this dish with a glass of crisp white wine, preferably from the Tuscan region.
  • Consider serving atop a bed of cooked linguine or risotto to create a complete meal.
  • Adjust the creaminess by adding chicken broth or white wine to the sauce if desired.
  • For an extra layer of zest, finish with a squeeze of fresh lemon juice.
