Every summer, my family and I gather in our backyard for a delicious Mexican feast. Among the various dishes on our table, Pico de Gallo always steals the show. It has become a staple in our household, loved by everyone from the youngest to the oldest. I remember the first time we made it together, chopping the tomatoes and onions, squeezing fresh lime juice, and eagerly mixing it all together. The vibrant colors and the refreshing aroma filled the air, making us even more excited to taste it. Ingredients:

  • 4 ripe tomatoes, diced (about 500g or 1 lb)
  • 1 small red onion, finely chopped
  • 1/2 cup fresh cilantro leaves, chopped
  • 1 jalapeno pepper, seeds removed and finely chopped
  • Juice of 2 limes
  • Salt to taste

Directions:

  1. In a bowl, combine the diced tomatoes, chopped red onion, cilantro, and jalapeno pepper.
  2. Squeeze the lime juice over the mixture and gently toss everything together until well combined.
  3. Season with salt to taste. Start with a small amount of salt and adjust according to your preference.
