Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups rotini pasta (or similar), uncooked
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups shredded cheddar cheese
  • 1/2 cup dill pickle slices, chopped
  • 1/2 cup beef broth
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • Salt and pepper, to taste
  • Fresh parsley or green onions, chopped (for garnish)

Directions:

Begin your culinary journey by boiling the pasta until al dente. As the pasta cooks, reminisce about the joy of biting into a juicy burger on a sunny day.

In a separate skillet, sauté the onions until translucent. Introduce the garlic, letting the aromas transport you to your favorite burger joint. Add the ground beef, browning it and seasoning with salt and pepper.

Pour in the diced tomatoes, ketchup, mustard, and beef broth. Allow this rich mixture to simmer, letting the flavors meld and converse.

Once the pasta is ready, drain and gently mix it into the beef mixture, ensuring each twist and turn of the pasta gets acquainted with the rich flavors.

Transfer half of this ensemble to a baking dish. Layer with half of the shredded cheddar, echoing the cheese melt on a classic burger. Add the remaining mixture on top, followed by the rest of the cheese.

Bake this layered beauty until bubbly and golden. Fresh out of the oven, sprinkle the chopped dill pickles, adding that quintessential burger zing.

Garnish with freshly chopped parsley or green onions, adding a pop of color and freshness.

Tips or Notes:

  • Consider adding in bacon bits for a bacon cheeseburger twist.
  • For a spicier kick, add some jalapeños or a splash of hot sauce.
  • Serve alongside a green salad or some steamed veggies to balance the richness of the casserole.
  • The casserole stores well, making for a delightful reheated meal. Ensure it’s stored in an airtight container.
