You can use chicken breasts, rotisserie chicken, or another protein of your choice; I even have a ham and ground beef variation!

A new take on the classic broccoli, rice, and cheese casserole. You can quickly and easily whip up this delicious and nutritious treat whenever you need a pick-me-up.

Of course you’ve tried and liked the classic dish made with broccoli, rice, and cheese. What about giving it a unique spin? This was my mom’s go-to dish, and she always made it for us when we were sick or had been very well-behaved. The simplicity of this recipe is almost as shocking as its deliciousness. This tasty dish is ready in 45 minutes and serves 8, so you and your friends can have a small get-together and everyone will be satisfied. They’ll probably eat it all before you can say “Jack!” so there’s a chance it won’t even be enough.

Ingredients

1 stick of butter

Two chicken breasts, skin removed, or two cups of rotisserie chicken, diced

A Measurement of Italian Seasoning: One Teaspoon

To taste, salt and pepper

(2 and a half cups) chicken broth

1/4 cup water 1 tbsp olive oil

One and a quarter cups of dry long-grain white rice

Around 2 cups of raw broccoli florets

Cream of Chicken Soup, Condensed, 10.5 oz.

1-and-a-half cups of milk

1/2 cup of sour cream

a total of 2 cups of cheddar cheese, shredded

Optional Seasonings

Thyme, dry, one teaspoon

About a half a teaspoon of garlic powder

Casserole Topping

One Cup of Crushed Ritz Crackers

Butter, melted, 2 tablespoons

Instructions:

Turn the oven temperature up to 350 degrees.

Minimize the chicken to bite size and season with Italian seasoning, salt, and pepper to taste.

Melt the butter in a large saucepan over medium heat. After about 5 minutes, add the chicken and heat until browned on all sides. Take away and put to one side. If you’re using a rotisserie chicken, skip this step.

Put the rice, olive oil, and chicken stock in a pot and bring to a boil over high heat.

Seal the lid and let it simmer for 7 minutes.

If using fresh broccoli, add it now and cover again. Wait 8 minutes before serving. Don’t bother waking anyone up.

Remove the lid and turn off the stove. Let the rice alone for 10 minutes before stirring. The rice at the bottom of the saucepan will fall to the bottom.

To a mixing bowl, add the cooked chicken, soup, milk, sour cream, any seasonings you’d like, and half of the cheddar cheese.

Place in a 9-by-13-inch greased baking dish and sprinkle with the remaining cheese.

Tips

It doesn’t matter if the broccoli is fresh or frozen, you may use either in this dish. Simply remember to prepare it in advance of incorporating it into the dish.
