The perfect summertime dessert is Strawberry Ice Cake, which requires zero baking. This strawberry cake-style recipe just requires 5 ingredients and a video demonstration. BBQ and potluck staple. Served with graham crackers, strawberries, whipped cream, and cheesecake (or cream cheese) pudding.

In the heat of summer, this no-bake strawberry ice cream cake is a staple in our household. On the weekends, we frequently pay visits to loved ones, and it’s always a hit when we bring this light and delicious treat to share. It makes me think of the traditional strawberry cake filled with a smooth cheese frosting.

This is a popular cake, and we produce a few different variations of it. They can be whipped up in no time flat and customized with a minimum of effort.

INGREDIENTS

Two pounds of berries
Graham crackers, enough for 2 packages
Cream cheese, one 8-ounce package, at room temperature
one 14-ounce can of sweetened condensed milk
Cheesecake-flavored instant pudding, two 3.4-ounce packages
Fluid Volume of Milk, Three Cups
Whipped topping, from a single 12-ounce carton, divided

Instructions:

Strawberries should be cleaned, their tops removed, and they should be sliced into 1/4-inch thick discs before being left aside. Prepare a graham cracker crust and put aside a 3-quart 13-by-9-inch baking dish. In a large bowl, whisk together the cream cheese and sweetened condensed milk until well combined and smooth. For the next four to five minutes, or until the pudding begins to thicken, keep the mixer on low and add the pudding mixes and milk. Whip the equivalent of 2 cups of whipped topping and fold it in. Split the cream cheese mixture in half and spread half of it on graham crackers. Distribute strawberry slices in a single layer over the cheesecake filling. The strawberries are layered between graham crackers and cream cheese mixture. Throw some more sliced strawberries on top of the cream cheese layer.
Refrigerate for 6-8 hours, covered. Spread the remaining whipped topping on top before serving. Sprinkle any remaining graham crackers with the crumbs.
