For years, I’ve relied on this recipe for the finest Chicken Salad Croissants ever—perfect for potlucks or a refreshing lunch on a hot day.

Tender chunks of chicken breast are wrapped within a buttery croissant along with crunchy celery, red onions (optional), almonds, and juicy red grapes in a sweet, creamy, and tangy homemade poppy seed dressing.

A tasty, handmade Chicken Salad, I think you’ll agree, is usually a crowd winner at group events like lady luncheons, wedding showers, baby showers, Graduation celebrations, and even a “working” lunch.

Extra virgin olive oil and 2 tablespoons of fresh lemon juice.
12 a cup of the miracle whip stuff.
A pinch of salt, 1.
One teaspoon of pepper.
Three and a half cups of cooked chicken, finely diced.
One cup of celery, chopped very small.
This package contains 12 tiny rolls.

Instructions:

In a small bowl, combine the lemon juice, miracle whip, and salt.
Toss the chicken with the lemon mixture and celery in a medium bowl.
Assemble the ingredients into little rolls and serve.
