Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts, cut into strips
  • 1 cup (120g) all-purpose flour

  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup (100g) breadcrumbs
  • Vegetable oil, for frying

Directions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Dip each chicken strip into the seasoned flour mixture, coating it evenly. Shake off any excess flour.
  4. Dip the coated chicken strip into the beaten eggs, allowing any excess to drip off.
  5. Roll the chicken strip in the breadcrumbs, pressing gently to adhere the crumbs to the chicken.
  6. Place the breaded chicken strip onto the prepared baking sheet. Repeat the process with the remaining chicken strips.
  7. Drizzle or spray the chicken fingers lightly with vegetable oil.
  8. Bake in the preheated oven for 15-18 minutes or until the chicken is cooked through and the coating is golden brown and crispy.
