Ingredients:
Softened cream cheese equaling 4 ounces from a block
Toss with 1/4 cup ranch dressing
Two tablespoons of fresh dill or thyme
Prepare 1 inch thick slices from 3 to 4 long cucumbers.
Half of 15 cherry tomatoes
Add salt and paprika or cajun seasoning blend for flavoring.
First, combine the softened cream cheese, ranch dressing, and herbs in a mixer. This will become the herbed cream cheese. To make them even, mix them thoroughly. Place the filling in a piping bag fitted with a star tip.
The second step is to score the sides of the cucumber with a fork after it has been washed, the peel removed, and the cucumber cut into quarters. Cucumber should be cut into pieces that are about an inch in diameter. With a melon baller, hollow out a half-moon shape in the middle of one end of the cucumber slice.
Step 3: Next, pipe in some herb cream cheese until it fills the crater and rises up the sides by about 1/2 inch.
