Ingredients:

  • 2 cups cooked chicken, shredded or diced (about 300 grams)
  • 2 cups broccoli florets, blanched (about 200 grams)
  • 2 cups cooked rice (about 400 grams)
  • 1 cup shredded cheddar cheese (about 120 grams)
  • 1/2 cup grated Parmesan cheese (about 50 grams)
  • 1 cup milk (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 2 tablespoons all-purpose flour (about 16 grams)
  • 2 tablespoons unsalted butter (about 28 grams)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a large skillet, melt the butter over medium heat. Add the flour and whisk until smooth to create a roux.
  3. Gradually pour in the milk and chicken broth, whisking continuously to prevent lumps. Cook until the mixture thickens and comes to a simmer.
  4. Stir in the garlic powder, onion powder, dried thyme, salt, and pepper.
  5. Add the shredded chicken, blanched broccoli, and cooked rice to the skillet. Stir gently until everything is evenly coated with the sauce.
  6. Transfer the mixture to the greased baking dish and spread it out evenly.
  7. Sprinkle the shredded cheddar cheese and grated Parmesan cheese over the top.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
