Ingredients:

  • 6 large eggs
  • 1/4 cup mayonnaise

  • Salt and pepper to taste
  • 6 medium-sized cooked shrimp, peeled and deveined

Instructions:

  1. Boil the eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the eggs simmer for 9-10 minutes. Remove the eggs from the heat and transfer them to an ice bath to cool.
  2. Peel and halve the eggs: Gently tap each boiled egg on a hard surface to crack the shell, then carefully peel off the shell. Cut each egg in half lengthwise, ensuring clean and even cuts.
  3. Prepare the egg yolk filling: Carefully remove the egg yolks from the halved eggs and place them in a mixing bowl. Set the egg whites aside. Mash the egg yolks with a fork until they are crumbly. Add the mayonnaise, Dijon mustard, Cajun seasoning, hot sauce (if using), salt, and pepper to the mashed yolks. Mix everything together until smooth and well combined.
  4. Fill the egg whites: Spoon or pipe the egg yolk mixture into the hollowed-out centers of the egg whites. Ensure each egg white is generously filled with the creamy mixture.
