Use a mixture of olive oil, Cajun spice, salt, and pepper to coat the corn on the cob, and then grill it until it is tender. Grill it until it reaches an ideal level of tenderness and char. The corn can alternatively be boiled or roasted in the oven. It’s a great addition to a summer picnic or as a side dish year-round. The addition of lime wedges enhances the flavor.
Why is Cajun corn on the cob so unique?

There is nothing quite like Cajun Corn on the Cob, which mixes the traditional sweetness and texture of corn on the cob with the robust and spicy flavors of Cajun cuisine. Paprika, cayenne pepper, garlic powder, and onion powder are common components of the Cajun seasoning used in this recipe. Differentiating it from regular corn on the cob, these spices give it a smokier flavor and a bit more spiciness. This recipe adds a cultural twist to the classic corn on the cob by drawing inspiration from Cajun cuisine, which has its roots in the southern U.S. state of Louisiana and the merging of diverse civilizations, such as French, African, and indigenous influences.

This dish is perfect for any gathering because it is simple to make and can be cooked in a variety of ways, including on the grill, in a pot, or in the oven. It goes well with any meal, but it really shines as a summertime side dish, or as a special addition to a picnic or a barbeque. Lime wedges, which can be added towards the end for extra flavor, are optional.

Ingredients:

Four de-husked ears of corn
1 tablespoon of Creole seasoning
As desired, season with salt and pepper
Two Tablespoons of Olive Oil
Toasted lime slices (optional)

The grill should be heated to about medium.
Combine the olive oil, Cajun spice, salt, and pepper in a small bowl.
Coat the corn evenly with the mixture and brush it on.
Cook the corn on the grill for 10 to 12 minutes, turning it once or twice, until it is soft and has a faint char.
If you’d like, you can serve it with lime wedges.

Corn can alternatively be boiled for 8-10 minutes, steamed for 5-7 minutes, or grilled at 375-400 degrees Fahrenheit for 20-25 minutes.
