A CASSEROLE OF SPAGHTTI AND CHICKEN

After inquiring with my Facebook following about the viability of posting a new stew recipe, I was met with resounding approval. A lot of people must really enjoy casseroles. San Diego isn’t exactly known as America’s stew capital, but that’s where I currently reside. Grilled chicken, tofu hot dogs, and salad without dressing are common dishes here. One of the unspoken horrors in Southern California is the use of pots and pans.

 

 

This dish is a winner when it comes to comfort meals, and it’s easy to see why: delicate pasta, chicken, and vegetables are smothered in a cheesy sauce.

 

The amazingness of chicken spaghetti casserole defies description, and yet there aren’t enough words to do it justice.

This basic dish of pasta, chicken, cheese, and vegetables may be altered in countless ways to suit your family’s preferences and the ingredients you have on hand. The only thing better than a bowl of this dish is a bowl of this casserole with you in it.

 

Ingredients:

 

2-1/2 cups of cooked chicken breast, chopped

2 cups of dried spaghetti cut into 2-inch lengths

1 cup of celery sticks (cut to 1/4-inch thickness)

one red bell pepper, diced, equaling one cup

1.5 tablespoons of minced garlic

Chicken broth with less salt and no fat, around 1 cup

1/2 tsp. of salt

Black pepper, freshly ground, 1/4 teaspoon

two cans of mushroom cream soup (condensed)

Spay for the oven

Shredded cheddar cheese equaling one cup

 

 

First, in a large bowl, combine the cooked chicken, the uncooked spaghetti noodles, the sliced celery, the red bell pepper, and the chopped onions.

Blend the mushroom soup, salt, broth, and pepper in a separate bowl. To the chicken mixture from step 1, add the soup mix and stir to combine.

Third, prepare two 8-inch baking dishes by spraying them with cooking spray. Put an even amount of the mixture (from Step 2) into each dish.

Fourth, top each dish with a half cup of cheese before covering with foil sprayed with cooking spray.

Fifth, put the plates into an oven that has been prepared to 375 degrees. Remove the foil after 30 minutes and bake for another 15 minutes.

Sixth, as the timer goes off, get the two casseroles out of the oven and serve to your loved ones.
