When I first spotted the funnel cake truck at the summer fair, I about lost it with joy. Without a question, I loved that section the most. Ingredients :
In other words, 2 big eggs
the equivalent of 2 tablespoons of sugar
1.25 ounces of whole milk
Half a vanilla bean
Two cups of flour for all purposes
Baking powder, one teaspoon
salt, kosher, 1/4 teaspoon
Four and a half cups of vegetable oil
Sugar powder, for sprinkling
Instructions:
First, stir the milk and vanilla extract into the egg mixture and beat the egg and sugar until it gets frothy and pale yellow, using a big bowl.
Mix the dry ingredients (flour, baking powder, and salt) in a separate basin, as instructed in Step 2. Then, gently incorporate the sifted dry ingredients into the wet until the batter is level and smooth (but not overmixed).
Third, pour enough oil to cover the bottom of the pot by two to three inches and heat it to 375 degrees Fahrenheit over medium-high heat.
Fourth, carefully drop a third of a scoopful of batter into the oil. Cook for another 2–3 minutes, or until the underside is golden brown; flip to brown the other side.
5. Take the funnel cake bits out of the hot oil and place them on a tray lined with paper towels.
Sprinkle with powdered sugar and serve right away, as in Step 6.
