The fact that this recipe, which I adore, is so easy to put together in a short amount of time is its greatest selling point. This recipe is the staple of every Thanksgiving Sunday celebration. This dish was discovered by me during my second year of college. Having a medical student for a roommate, I was interested in trying something new. She seldom had time to eat, so I would cook this in advance and store it in the fridge so she could grab it on the run.
During my vacation, I also cooked up this dish. The stuffed fridge is my favorite part of the holiday. I mean, it’s great that you can get away with not cooking for two or three days. If we were all honest with ourselves, we’d admit that the last thing we want to do after eating and/or preparing a huge turkey meal is anything that needs time in the kitchen.
Mashed potatoes, however, always outlast any other leftovers, so I make an exception for this recipe every year. They always get thrown away. This easy recipe turns trash into a tasty on-the-go morning meal that just requires a dump, a mix, and a plop.
Easy to make, fresh, and delicious. A hearty breakfast can be made using leftover mashed potatoes, sausage, cheese, eggs, chives, and a dash of cayenne pepper. Combine all the ingredients, then spoon them into a muffin tin to bake adorable treats for the week. As a person who has tried this recipe, I can attest to the fact that the leftovers are delicious and just as good as the original.
Ingredients:
The equivalent of three large potatoes, in cold mashed form: 700g
2 sliced shallots (scallions)
Delicious Cheddar Cheese, 1 Cup, Grated
grated Parmesan cheese equaling half a cup
3 large eggs, all by themselves
a quarter cup of whole milk
A quarter cup of melted butter
Thyme, either 2 tablespoons of fresh or 2 teaspoons of dried
Sprinkling of Onion Powder, One Tablespoon
1 tsp. of kosher salt
12 teaspoon of white pepper that is very finely ground
Instructions:
Step 1:
Lightly grease a standard 12-cup muffin pan and preheat the oven to 430 degrees Fahrenheit on the bake setting (not the fan setting). Then, combine everything in a big bowl, excluding the egg whites, and stir until smooth.
Step 2:
Slacken the mixture by folding in a quarter of the beaten egg whites, then folding the rest of the whites in.
Step 3:
Spoon the batter into the muffin tins and gently fold in the remaining whites. Put in the middle rack and bake for 20-25 minutes, checking occasionally.
Step 4:
Pull away from the stove. Put it on a plate and dig in!
