Banana Muffins, Made Right
If you’re looking for a healthier alternative to the typical muffin, look no further than this banana muffin recipe.

You can whip up a batch of these muffins with only a few staple foods. All you need is one bowl.
Made with 100% whole grains, these treats still manage to be light and airy. They’ll be unable to tell the difference.
And instead of using tons of white sugar, they rely on healthier alternatives like maple syrup or honey. I find that the maple syrup (or honey) adds just the right amount of depth to the dish.
Spice fans will appreciate the addition of just a touch of cinnamon. The aroma of these muffins will fill your home with delight.
Freezing these muffins is also an option. Defrost muffins in the microwave for 30-60 seconds, or until just warm. One must be careful not to overdo it.

Ingredients

one large egg, at room temperature
An Extract of Vanilla, One Teaspoon
13 cup of oil from vegetables
1-cup sugar
Baking soda, one teaspoon
Bananas, three, medium-ripe
A Half Teaspoon of Salt
1-and-a-half cups of flour

Instructions:

Get a big bowl and mix all the dry ingredients together. Prepare the banana purée in a separate bowl. Egg, oil, and vanilla extract should be thoroughly combined before being added. Mix the wet ingredients in until they are just incorporated into the dry ingredients. Prepare muffin tins by filling them halfway with either oil or paper liners.

Bake at 375°F for 18-22 minutes, or until a toothpick inserted in the middle comes out clean. Ten minutes in the pan will suffice before you need to transfer them to a wire rack to cool completely.

BASIC BANANA MUFFINS TIPS

By using a fork to mix the flour and sugar, you can help release any trapped air bubbles that might otherwise cause your muffins to be difficult. So don’t skip it!

Always use ripe bananas rather than green bananas since ripe bananas have a higher natural moisture content than green bananas. If they aren’t quite ripe yet, they will turn black before they are! You can also determine whether or not they are ripe by gently pressing the tip of a sharp knife into them or by slicing them open along their longitudinal axis. The ones that are most ripe will be placed on the exterior of the banana peel, while the ones that are still more immature will be made to appear as though they are still linked to the banana.

Before baking bananas, you can split them apart with a paring knife whether they are whole or partially peeled and then let them sit on a cutting board for 24 hours (if you are in a hurry, you can also cut off the ends of the bananas beforehand). This is due to the fact that mature banana peels contain a greater quantity of starch than their green counterparts do.

How can I speed up the ripening process of bananas?

Baking with ripe bananas is the best way to bring out their natural sweetness and rich flavor (or even overripe). You can hasten the ripening process by placing your bananas, along with an apple, avocado, peach, or tomato, in a brown paper bag and keeping it on your kitchen counter. This will prevent the ethylene gas from escaping from the fruit, which will speed up the ripening process. To hasten the process of ripening, place unpeeled bananas on a baking sheet and reheat them in an oven preheated to 250 degrees for 15 to 20 minutes.

I was wondering if muffins could be frozen.

Yes! We suggest that you freeze freshly prepared muffins if you won’t be able to consume them within three days. After the muffins have had time to cool, arrange them in a single layer on a baking sheet and place them in the freezer for at least half an hour, or until they are completely frozen. Wrap each muffin individually in aluminum foil, and then place them in a freezer-safe container with a tight lid. Banana muffins like these can be stored in the freezer for up to two months. If you want your banana muffins to turn out tasting fresh, make sure you follow these rules for the freezer.

How can I reduce the amount of calories in this recipe?

You may be able to lower the amount of fat and calories in these banana bread muffins by using unsweetened applesauce for some or all of the oil in the recipe.
