We prefer to have rib eye steaks at home where we can season and cook them to our liking. We’re just being a tad picky here. I enjoy browsing the meat case in search of thick, well-marbled rib eyes of the highest possible USDA prime quality.

For steaks, I prefer to use my cast-iron skillet because of the excellent sear it produces. Cast iron is also ideal for the final oven stage of meat preparation. Because his preferred steak doneness is lower than mine, I refrigerate his while I let mine come to room temperature. In other words, this helps keep the center from drying out. An undercooked steak can be fixed by cooking it for longer, but an overcooked one cannot.

This is my go-to method for cooking steak, and the results are always fantastic.

Ingredients

At room temperature, two rib eye steaks weighing about a quarter of a pound each

Season with 2 teaspoons of Kosher salt.

pepper, black, freshly ground, 1 teaspoon

Avocado oil, 1 tablespoon (or another high smoke point oil like canola)

Add 2 Tablespoons of Butter.

Instructions:

Turn on oven to 500 degrees Fahrenheit.

Use paper towels to dry the steaks.

Rub salt and freshly ground pepper into the steaks’ meat, making sure to get into the crevices. Leave the meat out for 30 minutes at room temperature.

Put some oil in a large cast-iron pan and heat it up over high heat until it’s very hot. Before you add the steaks, turn it down to medium.

Throw in the steaks and cook them for three to five minutes on each side over medium heat to get a nice crust on the bottom. Steaks should be seared for 3 to 5 minutes on each side.

Place the hot skillet into the preheated oven very carefully, using oven mitts.

Cook for another 3–5 minutes, depending on how well done you like your steak: 3 minutes for medium rare, 5 minutes for medium.

Cut the steaks in half across the grain and place them on a warm cutting board or dish.

Give them a five-minute break. You may finish them off by adding some butter on top.

You can either slice the steaks against the grain or serve them whole.

Enjoy!
