My mom used to make this all the time when I was a kid, and now that I’m an adult, I can’t wait to introduce it to my own kids.
Ingredients
two large potatoes for baking
Lean Bacon, Half a Pound
Shredded mild cheddar cheese equaling a third of a cup
Sour cream, 1/2 cup
Milk, about a quarter of a cup’s worth
2-tablespoons of unsalted butter, melted
a pinch of dried chives
half a teaspoon of salt
1/2 tsp. of black pepper, ground
1/3 of a teaspoon of onion powder
Shredded mild cheddar cheese equaling 3/4 cup
Instructions:
Step 1:
Get the casserole dish ready by greasing it and preheating the oven to 400 degrees. Put a few holes in the potatoes with a toothpick.
Step 2:
Bake the potatoes for an hour in a preheated oven and remove them from the heat after they have reached desired doneness.
Step 3:
Cook the bacon in a pan over medium heat, turning it occasionally, for about 10 minutes, or until it reaches the desired level of brownness. Afterward, crumble the bacon after letting it dry on a paper towel.
Step 4:
To prepare the potatoes, slice off a small piece from one side and carefully scoop out the insides into a bowl. Do not keep the skin. Then, incorporate the chives, salt, black pepper, garlic powder, sour cream, milk, butter, and shredded cheddar cheese into the potatoes.
Step 5:
Then, after greasing a casserole dish, sprinkle the cheddar cheese and crumbled bacon over the potato mixture and spread it out. Then, after preheating the oven, put the dish inside and let it bake for 10 to 15 minutes, or until the bubbles appear. Wait 5 minutes to serve after letting it cool.
