1 baked pie shell (approximately 9 inches in diameter)

To begin, preheat the oven to 350 degrees.
Then, take the coconut and literally spread this on a baking sheet. Put it in the oven and bake this, taking it out every so often to stir this. Keep doing this for about 5 minutes, or until the coconut is a golden brown color but not burned.
Gather your ingredients: sugar, half-and-half, eggs, flour, and salt, and combine them in a saucepan, whisking constantly, until everything is incorporated.
Start with a full boil, then reduce the heat to low and simmer, stirring occasionally. For the next two minutes, make sure to stir this constantly while cooking. Put the pot or pan down from the stove.
Combine the extract with the toasted coconut, about 3/4 of a cup. Hold on to the remaining coconut to use as a topping for the pie.
Fill the pre-made pie shell with the filling. then chill this in the fridge for at least 4 hours, preferably longer.
Spread some whipped topping on top of this, and then sprinkle the remaining coconut on top of that. Serve!
