Ingredients:

  • 1 package (16 oz) frozen pierogies
  • 1 pound kielbasa, sliced into bite-sized pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. In a lightly greased slow cooker, layer half of the frozen pierogies, kielbasa, diced onion, and minced garlic.
  2. Repeat the layers with the remaining ingredients.
  3. Pour the chicken or vegetable broth over the layers in the slow cooker.
  4. Cover and cook on low heat for 4-6 hours or until the pierogies are tender and the flavors have melded together.
  5. In a separate bowl, combine the shredded cheddar cheese, sour cream, grated Parmesan cheese, salt, and pepper.
  6. Stir the cheese mixture into the slow cooker, ensuring all the ingredients are well coated.
  7. Cover and cook for an additional 15-30 minutes until the cheese is melted and bubbly.
  8. Serve the casserole hot, garnished with fresh parsley for an added pop of color and flavor.
Notes:
  • For a spicier kick, use spicy kielbasa or add a dash of hot sauce to the cheese mixture.
  • Experiment with different types of pierogies, such as potato and cheese, spinach and feta, or even bacon and cheddar, to add variety to the dish.
  • If you prefer a crispier texture, you can broil the casserole for a few minutes at the end to achieve a golden crust on top.
  • Leftovers can be stored in the refrigerator for up to 3 days. Simply reheat in the microwave or oven for a quick and delicious meal.
