For the Meatballs:

100 grams of ground beef
50 g of cooked rice
14 cup finely minced onion 2 minced garlic cloves
14 cup finely minced fresh cilantro
1 egg
1 teaspoon of cumin, ground
a half-teaspoon of dried oregano
pepper and salt as desired

For the Soup:

8 cups of chicken or beef broth
Diced tomatoes, 1 cup
1 cup of carrots, chopped
1 cup of potatoes, diced
Chopped zucchini, 1 cup
1 cup minced onion 2 cloves minced garlic
Olive oil, 1 tbsp
1 teaspoon of cumin, ground
Oregano, dry, 1 teaspoon
pepper and salt as desired
garnish with fresh cilantro

All the meatball components should be combined in a sizable mixing basin. Use your hands to thoroughly combine the ingredients until they are completely combined. Create tiny meatballs that are bite-sized out of the mixture.

Olive oil should be heated in a sizable pot over medium heat. Garlic and onions should be added and sautéed until fragrant and transparent.

To the pot, add the diced tomatoes, potatoes, carrots, and zucchini. The vegetables should be sautéed for a few minutes to slightly soften them.

Cumin, dried oregano, and beef or chicken broth should all be added. To thoroughly blend the flavors, stir well. The soup should be heated to a rolling boil before being simmered for around 15 minutes.

The meatballs should be carefully added to the simmering broth. Make sure not to overfill the pot. Allow the meatballs to cook for 10 to 15 minutes, or until they are soft and cooked through.

Add salt and pepper to taste when preparing the soup. You can adjust the seasoning to your liking.

Pour the albondigas soup into serving bowls, being sure to heap each bowl’s portion with meatballs and vegetables.
