Ingredients:

Regarding the meatballs:

1 lb. of ground beef
a half-cup of breadcrumbs
Parmesan cheese, grated 1/4 cup, fresh parsley, chopped 1/4 cup, and milk
1 egg
2 minced garlic cloves
0.5 teaspoons of salt
Black pepper, 1/4 teaspoon
To make the soup:

8 cups of chicken stock
1 cup of tiny pasta, such as orzo or acini di pepe
2 cups chopped fresh spinach, 1 cup diced carrots, 1 cup diced celery, 1 small onion, 2 minced garlic cloves, and 1 tablespoon olive oil
pepper and salt as desired
For serving, grated Parmesan cheese

All the meatball components should be combined in a sizable mixing basin. Use your hands to thoroughly combine the ingredients until they are completely combined. Create tiny meatballs that are bite-sized out of the mixture.

Olive oil should be heated in a sizable pot over medium heat. Add the celery, carrots, onions, and garlic. The vegetables should be sautéed until they are soft and fragrant.

Bring it to a boil after adding the chicken broth. When the water is boiling, turn the heat down to low and add the meatballs. Approximately 10 minutes of simmering is required to completely cook the meatballs.

In accordance with the directions on the pasta package, add the pasta to the saucepan and continue cooking until the pasta is al dente.

Add the spinach, stir, and simmer for an additional two to three minutes, or until wilted.

Add salt and pepper to taste when preparing the soup. You can adjust the seasoning to your liking.

Pour the soup into dishes for dishing and top with grated Parmesan cheese.
