These no-cook peanut butter rice ball bites are a breeze to make. The best Christmas dessert is peanut butter balls, especially when they’re coated in chocolate. It’s the best holiday treat ever!
It’s hard to think that the holiday season of baking is upon us already. My yearly routine is rather consistent, and I have no problem with that. Tradition is what makes Christmas special for me. My Italian ricotta cookies and these no-bake peanut butter krispie rice balls are also great additions to that list.
I’ll never forget the year I tried to skip out on cutting out shapes for Christmas cookies and Mr. Wishes stormed out the door. Ha ha! Honestly, I have no idea how long it takes to create these cookies because I have never done any of the steps involved in making them (rolling, cooling, cutting, decorating, etc.).

Chocolate rice Krispie balls are a simple dessert that can be thrown together with just a few ingredients and are incredibly satisfying. A yummy snack that everyone, young and old, will enjoy.

Simply prepared sweets rank high on my list of preferred things. Take Thanksgiving from a year ago as an illustration. With so many relatives in town, I was unprepared for the commotion that would inevitably ensue. Luckily, I had a go-to dessert recipe in my back pocket, and I used it to impress my entire family. I have discovered a whole new set of cousins that I had no idea about before! This sweet is not only simple to make, but it also yields enough for a big gathering.

One of the dessert recipes you simply must have is for chocolate rice Krispie balls. This recipe is for more than just survival. Make this on a regular basis for your family (especially if you have a lot of kids), when you have guests over, if you’re throwing a party, or if you just want to treat a neighbor or coworker to a tasty treat. I’ve already mentioned that this dessert is simple to prepare, doesn’t call for many materials, and tastes amazing. It’s so obvious and good that no one could possibly dislike it.

Cook Time: 5 minutes

Freeze/Chill: 5-6 hours

Total Time: 5-6 hours 15 minutes

Ingredients

for the balls:

½ cup of peanut butter.

3 tablespoons soft butter.

1 teaspoon vanilla.

1 cup of Rice Krispies.

½ cup of chopped pecans.

1 cup of shredded coconut.

for the chocolate:

1 package of chocolate chips.

1 square of sweet chocolate.

Directions

For the balls:

Step 1:

Mix all the ingredients together in a large bowl. Ensure the mix is uniform, then let sit in the freezer for about four hours or overnight

Step 2:

Take out of the refrigerator and mold the chilled mixed ingredients into balls. Place in a tray and place in the refrigerator and let chill for an hour and a half.

For the chocolate:

Step 3:

Melt the chocolate chips and sweet chocolate together in a double boiler. Keep the boiler on low setting so that the chocolate remains soft.

Step 4:

Take the balls out of the refrigerator and then drop them one at a time into the melted chocolate mix. Use a fork to roll them so that the chocolate covers each ball completely.

Step 5:

Place the chocolate-covered balls on parchment paper and allow them to sit in the fridge until you’re ready to consume. Store in an airtight container and allow to warm up to room temperature before consuming. This allows the balls to be softer.

Tips

These chocolate Rice Krispy balls are best enjoyed within a couple of days. They will keep well for longer, up to 5 days, but the texture won’t be as soft.
