I absolutely adored this recipe. I did end up taking the advise of those who gave it to me, and I piled the potatoes with salt, pepper, and sauce in between each layer. I covered them for the first 30 minutes of baking and then removed the cover for the final 15 minutes. I turned on the broiler toward the end of the cooking process in order to give them a wonderful golden color. It’s possible that I didn’t need to cover them, but I was worried that they wouldn’t get fully cooked, and I knew that covering them wouldn’t affect them in any way. This straightforward cheese sauce resulted in the creamiest and most flavorful potato gratin I’ve ever tasted. I did use real parmesano reggiano cheese. The ideal complement to any type of protein. I can’t wait to try my hand at making them again!
Although I am aware that some people make elaborate plans for important meals several months in advance, I am typically the one who starts to become nervous approximately two days before the big event. And then I think of something that is tasty, but not exactly something that will blow your mind. This is the year that I want to show everyone what I’m made of! Because we have a gathering of guests coming over, I want to make sure to prepare something that is absolutely mouthwatering.
I happened into this dish, and it seemed just too delicious for me to ignore it. Even though I had made potatoes au gratin previously, these seemed to have that “something extra” that made them stand out. Before I could include these on my Easter meal, I first had to make sure they were successful in a test run.
Because these potatoes came out so amazingly, I almost considered making them the main course instead of something else. It was, according to my husband, the nicest thing he had ever tasted in his entire life — and coming from him, that is saying quite a bit!
Tip: The amount of cayenne pepper should be adjusted according to your preference.

A useful hint for lightening up this side dish is to make use of dairy items that are lower in fat.
