Cauliflower flower buds weighing 2 pounds
8 ounces of shredded strong cheddar cheese, split
Shredded 8 ounces of Monterrey Jack cheese, split
Cubed cream cheese, 8 ounces
Heavy cream, 4 tablespoons
1-1/2 cups chopped green onions
Crumbed, fried, and smoked bacon equivalent to six pieces
1 minced garlic clove
0.5 tsp Salt

Turn the oven temperature up to 350 degrees Fahrenheit.
Step 2:
In order to have a soft texture, cauliflower florets should be steamed.
Step 3:
Combine all of the cream cheese, the heavy cream, and 6 ounces each of the shredded cheddar and Monterrey Jack. After the cheese has melted, add in the green onions, bacon, and garlic.
Step 4:
Steamed cauliflower florets should be drained and added to the cheese sauce. Blend cauliflower with the cheese in a bowl. Season to taste with salt and pepper.
Step 5:
The mixture from step 4 should be poured into a 3-quart casserole dish. Cover the dish with foil and sprinkle the remaining 2 ounces of cheddar and Monterrey Jack cheeses on top.
Step 6
Put the dish in the oven and bake it for 25 minutes with the foil on. Take off the foil and bake for a while longer if you want the cheese to bubble. Immediately remove from oven and serve.
